Daring Bakers - Pot Pie


I have now joined Daring Bakers which was really the ultimate aim of setting up this blog.
This is part and parcel of the Daring Kitchen and each month you are given a baking challenge to complete.
This month’s challenge was to create a pot pie, it was hosted by Rise and Shine: http://www.daringbakerduluth.blogspot.co.uk. You had to make either one in a traditional sense or a pizza pot pie. I decided to go for the pizza pot pie but chose to change some of the ingredient in the filling to suit my fussy tastes.

The first element of it is to make the pizza dough. I wanted to use my new Kitchen Aid to do this and this worked really well up to a point. I found the mixture was quite wet and therefore quite hard to handle and not really the consistency i was expecting. However I powered on hoping I hadn't gone too wrong and the dough looked like this before putting it in the fridge to rise.
 

A few hours later and I decided to get ahead of the game and make the filling. I chose to use chicken, leeks, spinach and onion as the main ingredients to my filling with the garlic and cheese white sauce laid out in the recipe and also some Parmesan and of course seasoning.
I had to precook all but the spinach before putting it in the pie, with chicken this was great because it really gave me the reassurance that I wouldn't be giving anyone food poisoning!


Having removed the dough from the fridge and knocked it back, I made the sauce which thickened much more quickly than expected.

Then came the fun part rolling out the sticky Dough, this did prove a bit of a challenge however I managed to make it big and thin enough to cover my dish and have some left over for the top. As you can see from the picture there were a few holes to repair.


Hoping my filling would all fit, it looked like it would be too much, however surprisingly it seemed to be a perfect fit! I gently poured this into the pastry before covering the top and sprinkled oregano on it before placing it in the oven to bake.

I found the timing of the baking quite difficult because it quickly went brown on top however I was not convinced the bottom was cooked, I took it out just before I thought it was going to burn and it was good that I left it that long because the bottom if anything was slightly on the underdone side.
However it was still very edible and i think the sauce worked really well!
